Since April I have been teaching a class from 6 pm to 8:45 on Tuesdays. The first quarter I did it because it was the only time they could fit an extra section of the Brand Portfolio class in that worked with student schedules, and this time I decided it would be the best way to get more time in my office while still teaching three classes.
So part of my Tuesday ritual has become prepping the leftovers for our late-evening dinner. I try to have something like lasagna or pizza or calzone that can be heated while I am riding the Metro and walking home. I make a quick call as I leave school and specify time and temperature. I pull dinner out and put it on plates when I arrive home about 9:15 pm. This is the next to the last night for this ritual–next quarter I only have two classes, which are on the same day.
Did I mention these dishes are all homemade? I have been using Italian flour to get the thin crust on pizza and calzone. I have all kinds of secret things in my lasagna, but the most important is meatballs from Little City Meats.
